Turkish Red cabbage salad:
Ingredients
1/2 medium red cabbage, core discarded and sliced thinly
1 small carrot, coarsely grated
½ cucumber
1 pomegranate seeds
Small bunch of parsley, stems discarded and chopped
2 tbsp extra virgin olive oil
juice of 1/2 lemon
salt and pepper
For the dressing:
1 fresh lemon, squeezed
Black pepper
Salt to taste
Method:
• Cut the cabbage in half and discard the outer tough leaves and the inner core.
• Cut each half into quarters and wash it thoroughly.
• Place each quarter on its side and slice very thin slices
• In a large bowl or plate, pile up the sliced red cabbage and using your hands, mix in the chopped parsley, pomegranate seeds, grated carrots, and cucumber.
• Pour over the dressing (add dressing to suit your taste) and mix it well.
• Refrigerate for an hour before serving.

Mediterranean Kidney Bean Salad
Ingredients
4 tbsp olive oil
Juice of 1 lemon
salt and pepper (to taste)
3 (15 oz) cans kidney beans (or you can use mixed beans), rinsed well
2 cloves garlic, crushed
1 green, red and yellow pepper, chopped
3 green onions, thinly sliced
1 tbsp parsley, chopped
½ Cucumber
For the dressing:
1 fresh lemon, squeezed
1 tbs extra virgin olive oil
2 tsp British mustard
2 garlic clove
Black pepper
Salt to taste
Method
1. In a large mixing bowl, combine the kidney beans, chopped peppers, green onions, cucumber and parsley (or any fresh herbs of your liking).
2. Stir until combined.
3. Pour over the dressing to the salad bowl and mix it well
4. For best results, cover and refrigerate for a bit before serving so that the beans are nicely soaked up in the dressing. Give the salad another quick toss before serving.

Mixed Fruits and vegetable salad
Ingredients
1 apple, skin on
½ pineapple
2 guavas
1 pomegranate seeds
1/2 cucumber, skin on
½ romaine lettuce
1 carrot
Salt & sugar
Chaat masala
French dressing
Dressing
1 tsp brown sugar
Salt to taste
Chaat masala
Light French dressing (optional)
Directions
1. Cut the apple, pineapple, guava, cucumber, and carrots into small neat dice (you can use any fruits and vegetables of your choice)
2. In a large mixing bowl, combine all the fruits and vegetables
3. For the dressing: add sugar, salt, chaat masala and French dressing to the salad bowl. Whisk vigorously to combine.
4. Cover and refrigerate before serving.
