Oh boy, today I'm quarantine cooking frugal meals on a budget for large families using mainly beans and rice as our main ingredients! On the first night, I cook beans and rice, plus corn on the cob as a side dish. On the 2nd night, I make over 20 Qts of homemade chili. After that, we make 4 large chili cornbread bakes for dinner and as freezer meals. I bulk cooked plenty of extra rice and ground beef that I additionally made into 4 pans of Taco Bake freezer meals, too. These cheap budget dinners each will stretch for several days and even weeks.
